1 small pumpkin
2 tbsp honey
2 tbsp cider for seasoning
2 tbsp nut butter
½ cup cider for basting
Place the whole washed pumpkin in a baking dish in a preheated 350 F oven for 1½ hours. Remove, cool, and cut a 6 inch diameter hole in the top. Remove the pulp and save the seeds. Remove the pumpkin meat and mix with the next 3 ingredients; return to the shell. Replace the pumpkin top and return the pumpkin to the oven to bake, basting occasionally with additional cider, for 30 min more. Serve the whole pumpkin, scooping out individual portions at the table. Toast the reserved seeds on a flat tray in a 350 F oven for 30 minutes and serve on top.
